What is a garlic scape?
Scapes are the green stems snapped off mid-season to promote garlic growth. Its unique flavour lies between fresh garlic and green onions.
How do we harvest our scapes?
Garlic scapes make their appearance at the top of the hardneck garlic varieties and are ready to harvest when they form a spiral. Snapping the scape off a garlic plant when it gets to the curl point is essential to the growth and strength of the garlic bulb. The scape holds a mild garlic taste that makes up the central flavour palette of the dips.

I’m on Team Garlic Scape Dip, while my wife is on Team Roasted. So to keep our family happy we stock up on both. Besides being awesome on toast, and crackers, and anything, for that matter, it has the added benefit of keeping strangers 6 feet away from us. Edible Acres’ Garlic Scape Dip is just the latest innovative “Columbia Valley Made” food product.

A few years ago I had never heard of “garlic scapes”. Now every time we are near the Edible Acres stand at the market, it is a competition between my son and I for who is going to do the best job “sneaking” some samples of garlic scape dip while trying to make Oliver and friends laugh! In the summer months we go through about a tub or two of garlic scape dip a week. It is amazing stuff! If you haven’t tried it, you must. Roasted and fresh should both be explored. Be warned, it may be (it is!) habit forming! 😀 .
